
The Seer Cabernet is the original Seven Dials Wine, Sienna walked the vineyard with me back in 2019. The aim was to make a wine that was lighter and more expressive. In 2022 the organic Blewitt Springs Vineyard provided fruit that was aromatic yet had amazing tannins. Only a gentle plunging during ferment to ensure the wine wasn't over extracted.

The Observer Shiraz is the second Seven Dials Wine. Shiraz reflects where ever it is grown, Geneva is a cultural chameleon in that she can observe and adjust to fit in. I had tasted wines from this vineyard for a few years, the grapes were just too good to pass up. In 2021and 2022 the organic Blewitt Springs Vineyard provided fruit that had a broad flavour spectrum without getting over ripe characters. Some whole bunches were thrown in and only hand plunged once ferment started.

The Ancestor Blend is the third Seven Dials Wine. The Aussie Claret Blend of Cabernet and Shiraz is a classic and it provides the best aspects of both varieties shine. The Ancestors pass on their wisdom, if we are willing to communicate. This wine has the most aging potential of the Seven Dials Wines. The wine to develop through aging, even after just a few years, much more complexity and layers have formed and the tannins become softer.
